Black Sea bass

1 whole Black Sea bass (or red snapper) 6 pounds

potatoes for bed

cherry tomatoes for bed

parsley

rosemary

thyme

olive or avocado oil 

white wine

preheat the oven at 390 F

clean and scale the fish

​

toss the potatoes with the oil, rosemary and salt and pepper. Spread them on the baking dish along with the tomatoes

​

season the cavity of the fish with a bunch of parsley, a bunch of thyme, salt and pepper.

lay the fish on top of the potatoes, rub it with oil, pour some white wine over it. Cover with aluminium foil and bake for 50 min.

​

discard the foil, wet the fish with the cooking juices and bake for another 30 min or until cooked through

​

filet the fish meanwhile finish cooking the potatoes in a baking sheet to make them crispy, reserve the cooking juices and serve with the fish
