CARROT CAKE
Mix:
1.5 cup almond flour
2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/8 tsp ground cloves
1/8 tsp salt

Whisk:
2 eggs
1/4 cup olive oil
1 tsp vanilla extract
2/3 cup maple syrup
1/2 cup greek yogurt
1/3 cup milk
​
mix wet and dry ingredients and stir
​
Add:
2 grated carrots
1/2 cup raisins
​
Bake for 20-25 min at 350
(30 min if using a deep dish)
​
let cool. meanwhile prepare the frosting
​
Frosting:
1.5 cup greek yogurt
2 tbsp maple syrup
1 tsp vanilla extract
​
spread and let cool
