CARROT MUFFINS
(coconut flour)
1/2 cup (64g) coconut flour
1/2 teaspoon baking powder

sift
.
6 eggs
6 tablespoons olive oil
5 tablespoons maple syrup
1/2 teaspoon vanilla extract
.
mix
.
2 grated carrots
a handful of raisins

 
oven at 395F
mix dry ingredients, mix wet ingredients then mix them all together, add the carrots and raisins and scoop into the muffin papers to half full.
bake for 16 min
